Not your Mumma’s Banana Bread

 Blend (I used my NutriBullet)

4 very ripe bananas and 2 ripe avocados 

With the palm sugar

Place in a bowl

Now add all other ingredients to Blender except coconut flour

These measurements are guesstimated 

  • About 16 oz of cashews
  • 2 eggs
  • Table spoon of avocado oil
  • Teaspoon baking soda 
  • Couple shakes of 
  • Sea salt 
  • Cinnamon 
  • Few coffee or espresso beans if you don’t have the savory spice shop bakers coffee blend seasoning

Mix together in bowl

Now slowly add coconut flour.  This is the most important part. It can and will get dry if you add too much.
You want texture to be thick and creamy.  Start with 1/4 cup and then add only about a tablespoon at a time.

Line pan with parchment paper or grease with coconut oil.

Bake at @ 375 degrees for about an hour or until center is spongy and cake-like.

My oldest son was home for a visit and ate the whole thing.  He had no idea it was not made with white flour.  No thick coconut taste.
